Bubba’s Elote Street Corn
4-6 ears corn, roast on grill or in oven for 20-25 minutes. Remove husk and cut off cob. If husk already removed rub olive oil over corn & season with Bubba’s BBQ Pork Rub Seasoning, then grill/roast 15-20 minutes and cut off cob.
In bowl with corn add:
- 1/2 cup Mayonnaise
- 1/3 cup Sour Cream
- Cotija Cheese
- Bubba’s BBQ Signature Pork Rub
- Juice from 1/2 lime
Mix mayo, sour cream and lime juice with corn. Sprinkle about 2-inch cube of Cotija cheese and 2 teaspoons Pork Seasoning then mix. Place corn mixture in casserole dish top with a sprinkling more of the cheese & Pork Seasoning.
Bake at 350° for 20 minutes.
